Lazy gourmet's curried tomato and lentil soup

Ingredients

1 can All Gold Indian tomatoes
1 can diced tomatoes
1 cup red lentils
2 cups vegetable/chicken stock
Preparation time: 2 minutes
Cooking time: 25 minutes

1. Mix all the ingredients together in a pot
2. Gently bring to the boil
3. Simmer until the lentils are soft (approx. 20 minutes), stirring regularly

Enjoy with crusty brown bread or Indian naan!

Pro tips:
- If you like a thicker broth or a thinner soup, vary the amount of stock liquid.
- The Ina Paarman range of stock powders is brilliant; the "chicken" stock (vegeterian! no chickens are harmed) is particularly good in this soup.
- If you can't find the Indian Tomato can from All Gold, substitute a can of regular tomatoes, and add a teaspoon of hot curry powder. Extra points if you can find 3 bay leaves and 5 cardamom pods to toss in.
