Batched Old Fashioned
Ingredients
3 and half cups bourbon
1/2 cup water
60 ml organic maple syrup or a sugar syrup of your choice
15 ml apple bourbon bitters or a bitters of your choice
- Add everything to a 1L bottle using a big enough funnel. The liquid is slightly too much for a 1L bottle, so use the overflow for a knertsie
- If you don’t have a big bottle, use two smaller 750ml bottles. If you do, add everything to a big jug first, mix, then decant into bottles
- Cap the bottle/s and turn a few times to mix
- Store in the fridge for 24 hours, or in the freezer if you want to drink it sooner
To serve:
- Pour 80 ml into a tumbler half-filled with ice, or over one large ice cube. Give it a stir
- Peel a strip of orange, face the skin towards the drink, and squeeze gently to release the oils over the surface of the drink. Run the peel around the rim of the glass, then drop it in
- If you prefer more orange in your drink, use 1/2 orange slice and drop it into the glass instead. Don’t squeeze
[Sugar syrups]
Simple syrup:
- In a small pot on the stove, add 1 cup sugar to 1 cup water (1:1 ratio)
- Wait for it come up to temp until the sugar dissolves, turn off the heat and leave to cool
Rich simple syrup:
- Use 2 cups sugar to 1 cup water (2:1 ratio)
You can scale it up using the ratios.
You can get different results with different sugars. Instead of regular white sugar, try Demerara or treacle sugar instead.

The apple bourbon bitters are available from New Harbour Distillery. They have a range of other bitters too.
