Macaroni Cheese
Ingredients
30ml margarine
20ml cake flour
500ml milk
1 bay leaf
pinch of mustard powder
pinch of nutmeg
1 cup grated chedder cheese (mature cheddar if preferred)
salt and pepper to taste
1/3 pkt cooked and drained macaroni (F&M is my favourite)
1 large egg, beaten
extra cheese for topping
15ml dried breadcrumbs
1 medium tomato, sliced
1. Preheat oven to 200 degrees Celcius.
2. Melt the margarine in a saucepan, add the flour and cook for 1min (take care not to let it burn).
3. Slowly pour in the milk, stirring continuously to prevent lumps from forming (using a whisk works well).
4. Add the bay leaf, mustard powder and nutmeg to the sauce, and cook over medium heat, stirring regularly, until thickened.
5. Remove the sauce from the heat, and stir in the grated cheese. Taste the sauce and add salt and pepper as required.
6. Spray a rectangular oven dish with non-stick baking spray. Combine the macaroni, beaten egg and cheese sauce and pour into the dish.
7. Sprinkle extra cheese and breadcrumbs over the mixture, and arrange sliced tomato on top.
8. Bake in preheated oven for 20-30mins.
