Spaghetti Carbonara
Ingredients
1 Handful spaghetti
1 Cup frozen peas
3 Slices bacon, chopped
2 Large eggs
1/4 cup finely grated Pecorino Romano / Parmigiano Reggiano cheese
1/4 teaspoon salt
1/4 teaspoon pepper
Cook spaghetti 3 minutes less than label directs (approx. 12 min in 900W microwave). Add peas and cook additional 3 minutes. Reserve 1/2 cup cooking water; drain pasta and peas.
While spaghetti is cooking, fry bacon until browned, reserving 2 tablespoons fat.
In large bowl, beat eggs, cheese, reserved fat, reserved water, bacon, salt, and pepper. Pour over hot spaghetti and stir through.
