Rosemary & Honey Chicken-Potato bake
Ingredients
(these numbers are approximate)
6 chicken drumsticks
500 g potatoes
30 g butter
3 tbs honey
2 tbs lemon juice
1 garlic clove
1-2 twigs of rosemary
salt and pepper to taste
tbs = tablespoon
Peel and cook the potatoes. Don't over-cook; they should still be firm (Alternatively, the potatoes may be left raw, but this will lengthen the required final time in the oven.)
Slice the potatoes into thick slices.
Preheat over to 200 ÂșC.
Melt butter in a saucepan.
Add the juice of 2 lemons to butter, and stir
in the honey, crushed garlic, rosemary, salt and pepper.
Place the chicken and potato slices in an oven-proof casserole dish, and pour the butter-lemon-honey-herb mix over it.
Bake in oven for ~30-40min (50min if potatoes are raw) and until it gets a nice golden colour and smells delicious.
Serve with a green salad. Any unused sauce can be used as a salad dressing, too.
