Esteban's (Vegetarian) Pasta Haloumi

Ingredients

Haloumi cheese
Garlic
Tin of chopped+peeled tomatoes
Fresh spinach
Dried chilli flakes
Dried sweet basil
Tagliatelle or other pasta
Lemon

1. Start cooking the pasta in salted water (roughly 13 mins on high in the microwave).

2. Fry the haloumi cheese in some olive oil with a generous sprinklink of chilli flakes.

3. Add tin of tomatoes.

3. Blanche the spinach (pour over a kettle of hot water) and add.

4. Season with salt, pepper and sweet basil, then cook for a minute or two.

5. Add some ground lemon rind and drizzle some lemon juice.

6. Serve hot!
